Vegan Chocolate Mousse
2 small, ripe avocados
2 tablespoons unsweetened cocoa powder
¼ cup soy milk or almond milk
2 teaspoons agave, honey or real maple syrup, or to taste
1 tsp vanilla extract
Place all ingredients in blender jar and blend, scraping down sides as necessary. Mixing will be mousse-like. Add more milk carefully, a tiny bit at a time, if needed. Spoon into cups and garnish, if desired. Refrigerate. Enjoy!
